giphyFried chicken and vodka?! As it turns out, adding vodka to your fried chicken marinade is key in creating the ultimate crust that everyone craves in a piece of fried chicken.

Because vodka is much more volatile than water, it evaporates waaay faster; this creates bigger vapor bubbles, drives moisture off the crust of the chicken in a hot second, and adds surface area to the crust – all things that contribute to lighter and crispier fried chicken.

So, grab a bottle of vodka and add two teaspoons to every cup of your seasoned marinade — you won’t be disappointed. Plus, this means you have an excuse to drink with your twist on crispy fried chicken – sign us UP.

    Some recipes don’t call for it, but to keep the chicken extra juicy you can soak it in a marinade (this recipe using vodka). Afterwards comes the breading, the frying and the eating!
