If you know anything about whiskey, you know it takes eons to make! In fact, most straight whiskeys spend a least two years in a cask aging before being bottled. So when David Perkins founded West Distillery in Park City Utah with the hope of introducing an original aged whiskey to the market, he knew he had to rely on some more immediate measure in the beginning. So he did what any sensible distiller would do, bottled two before letting them age.
