Chocolate Covered Strawberry Shot
Ingredients:
A box of big strawberries
Godiva Dark Chocolate Liqueur
A bag of dark chocolate chips
Whipped cream

Directions:
1) In a double boiler pot, melt the chocolate chips.
2) Cut tops of strawberries off, and hollow out with a grapefruit spoon or pairing knife. Do not hollow out too thin.
4) Dip strawberries in chocolate and set on wax sheeted baking sheet and freeze until standing and stable.
5) Let them defrost a bit to avoid brain freeze.
6) Fill strawberry with Godiva Dark Chocolate Liqueur.
7) Top with whipped cream and bottoms up!

Watermelon Margarita Jello Shots
Ingredients:
2 cups fresh watermelon cubed
¼ cup frozen limeade concentrate thawed and strained
¼ cup water
2 tbsp Grand Marnier
½ cup silver tequila
2 envelopes knox unflavored gelatin
6 medium limes

Directions:
1) Cut limes in half and remove pulp from the rinds with a pairing knife.
2) In the food processor or blender, puree the watermelon until smooth.
3) Strain through a fine mesh sieve placed over the bowl, and use the back of a spoon to press on the pulp to extract.
4) Pour water and limeade concentrate into a small saucepan and sprinkle with gelatin. Allow to soak for a minute or two.
5) Heat over low heat until gelatin is fully dissolved, about 5 minutes.
6) Stir in 1 cup of watermelon juice, the Grand Marnier and tequila.
7) Pour mixture into lime halves, filling all the way to the top.
8) Chill in the fridge for at least 2 hours.
9) Using a sharp knife, carefully cut each lime half in half again, making wedges.
10) Stick in chocolate chips, if desired to create watermelon seeds.

Cucumber Gimlet Shots
Ingredients:
1 cucumber
1 ounce Hendrick’s Gin
¼ ounce freshly squeezed lime juice
¼ ounce simple syrup

Directions:
1) Peel a cucumber, and cut 2 2½ inch pieces from each end, reserving the center length of cucumber. Trim the rounded end of the cucumber pieces so that they are flat on the bottom, taking care not to cut into the seeded part, as it will not be watertight.
2) Using a melon baller, carefully hollow out the cucumber shot glasses, making sure to not cut through the cucumber walls or bottom. Reserve the cucumber seeds and flesh in a bowl.
3) Combine the gin, lime juice, simple syrup, and a heaping teaspoon of the cucumber flesh in a cocktail shaker. Top with ice, and shake until chilled. Strain ainto the cucumber shot glasses.
