A close cousin to a winter’s warm hot toddy cocktail, the gold rush is a simple, three-ingredient drink that will provide you with all the sweet and tangy taste a summer cocktail should contain. With its bourbon base and full-bodied flavor of lemon and honey, there’s no thirst this beverage can’t satisfy.

You only need a few items to get started, but feel free to adjust the ingredients if you prefer a stronger or sharper drink.  To get started…

(Makes 2 drinks)

  • 3 Tbsp. honey
  • 2 Tbsp. boiling water
  • 4 oz. bourbon
  • 4 Tbsp. lemon juice

Mix the honey and boiling water together in a small bowl until it creates a thin syrup. Add the bourbon and lemon juice and continue to stir. Place the finished concoction in the refrigerator until its ready to serve.

Then, shake in a cocktail mixer and strain over a few ice cubes into a glass. Time to drink and enjoy.
