This winter may have ruined several pairs of our best boots with the unavoidable salts and muddy snow slush. But with a little help from our favorite beverages, our attitude remains as light as the first snow.  So, even if you are physically, mentally, and emotionally over winter and ready for spring to begin, let’s take one last moment to commemorate the warmth and joy that winter cocktails bring.

Coconut Kahlua Hot Chocolate

2 cups unsweetened coconut milk (not canned)
2 tbs Kahlua
2 tbs sugar
2 tbs unsweetened cocoa powder
dash of ground cinnamon
whipped cream

1. Bring the coconut milk to boil in a small saucepan. When the milk starts bubbling, stir in the sugar and cocoa powder until the sugar is dissolved and cocoa powder is well mixed.
2. Remove the milk from heat, and stir in the Kahlúa. Add a dash of cinnamon and stir.
3. Serve in two cups and top it with whipped cream if you like.

Red Hot Toddy

1 ½ oz Fireball Whisky
1 cup hot water
1 tsp honey
½ oz fresh lemon juice
5 whole cloves
1 cinnamon stick

Fill a mug with hot water. Add ingredients and stir with the cinnamon stick.
