You know what blondies are, right? They are the love child of the chocolate chip cookie and the brownie and they are basically what you’d call God’s gift to baked goods. Well, they are special enough to get their own holiday and thankfully, that glorious National Blondie Day is today. Don’t ask us why it’s today – just make one of these blondie-themed recipes and enjoy.
We know it’s winter, but let’s be honest – boozy blondie milkshakes are awesome any time of year.
- Blend 2 quarts of softened vanilla ice cream with 1 cup malted milk powder (like Ovaltine) and 2/3 cup Scotch in a blender until smooth. You may need to do it in batches because this recipe makes 8 servings.
- Divide among chilled glasses and serve.
- *We think this recipe might even be a little better with whipped cream on top and a swirl of chocolate syrup.
Full disclosure: this Blondie Mary isn’t going to taste anything like a real blondie, but it’s got “blondie” in the name and it’s delicious, so we’re making it.
- Working in batches, puree 4 1/2 lbs. yellow tomatoes in a blender or food processor until smooth. Strain the tomato puree through a fine sieve set over a bowl.
- Add 1 cup vodka, 2 Tbsp. lemon juice, 1 1/2 Tbsp. horseradish, 1 Tbsp. Worcestershire sauce and 1 Tbsp. Tabasco to the strained puree and season with salt and pepper.
- Pour the mixture into a pitcher and refrigerate until chilled, about 2 hours. Serve over ice, garnished with celery sticks.
If you want your booze, but don’t want to miss out on actually eating a blondie, just combine the two into brown butter bourbon chocolate chip blondies.
- Preheat the oven to 350 degrees. Line a 8×8 inch baking pan with foil and lightly spray with cooking spray.
- In a small saucepan over medium heat, melt 1 stick of butter. Cook the butter, stirring frequently until a deep golden color develops. There will be little bits and pieces in the butter that will turn brown, but make sure they don’t burn. Do this for about 7-8 minutes. Immediately pour the butter into a heat-proof mixing bowl, scraping all the bits into the bowl.
- Whisk together 1 cup and 1 Tbsp. all-purpose flour and 1/8 tsp. salt in a medium bowl. Set aside.
- Beat the butter and 1 cup light brown sugar in a mixing bowl until smooth. Add 1 egg, 1 tsp. vanilla extract, and 1/4 bourbon, mixing until combined. Stir in the flour mixture, followed by 1/2 cup chocolate chips.
- Spread the batter into the prepared pan. Bake for 20-25 minutes until the top is golden brown. Remove the pan and allow to cook on a wire rack. Once cool, cut into bars and serve.
