There is a light at the end of the tunnel after all, Spring has arrived! In this seasonal transition period, we often practice a little something called “spring-cleaning.” With an urge to purge the clutter, we let go of the cold winter season and gain a sense of renewal. Nobody said it was easy to let go of your glory days, bell bottom pants or your most comfortable, tattered college sweatshirt. Thankfully we are providing you with this healthy, gluten-free Carrotini recipe, to help you cleanse. It’ll give you a spring in your step as you sort through the must keep and gotta go piles.
1 tbsp fresh lavender blossoms, plus sprigs for garnish
½ cup sugar
½ cup carrot juice
½ cup potato vodka such as Blue Ice
1) Put lavender blossoms, sugar, and 1/2 cup water in a microwave-safe bowl. Microwave until very warm, then stir to dissolve sugar. Let sit at least 20 minutes but no more than 1 hour, then strain syrup.
2) Pour 1/4 cup syrup, carrot juice, and vodka into a cocktail shaker filled with ice. Shake well to blend, then strain into 2 martini glasses. Garnish glasses with lavender sprigs.
