Tom Collins recipe

We’ve said it before and we’ll say it again, 2014 is going to be a big year for gin. The juniper inspired spirit is one of our favorites for it’s full flavor and endless cocktail possibilities. We’re taking it back to a gin classic this week with the Tom Collins.

The Tom Collins has been around since at least the 1860s. Created by a London waiter (ironically named Tom Collins), it’s stood the test of time and we’re still drinking them today. Here’s what you’ll need to make your own this weekend:

  • .75 oz. fresh lemon juice
  • .75 oz. simple syrup
  • 1.5 oz. Gin
  • Club soda

Add lemon juice, simple syrup and gin to a shaker will ice. Shake well and strain into a Collins glass (or highball). Top off with club soda and garnish with a lemon wheel and cherry.

For a little flavor kick – add a splash of your favorite liqueur to the bottom of the glass. We suggest peach or blackberry to compliment the gin flavor.
