PeachBellini

Finally, the day has arrived when we can once again stroll out of the grocery store grinning—peaches in hand. Now that our favorite fruit is back in season, it’s time to concoct the peach drink we’ll be sipping all summer long: the Bellini.

This cocktail has strong historical ties to Italy in the mid-20th century, and was first served at Harry’s Bar in Venice. Because of its pink color, it was named after an artist who used the same color to paint a toga in a 15th century painting. Sure.

Not much is needed to whip up this fruity selection, but make sure you have:

  • 2 ripe peaches, peeled and pureed
  • Chilled Prosecco
  • 2 chilled champagne glasses

Add one part pureed peaches and three parts Prosecco to each glass, take a relaxing breath, and enjoy.
